Upper Svaneti in the Greater Caucasus is where Svaneti herb salt comes from. In the mountain villages, herbs picked here at 1800 meters and then mixed are thought to help people live longer. Even though the ingredients often change, you know what they are, but you don't know how much of each to use. Svanetian salt is used in sauces, soups, salads, and dishes made with flour or potatoes. Ingredients

salt
garlic
velvety
coriander

Preparation

Mix the salt and the different herbs. The garlic needs to be broken up in a mortar and the cloves need to be dried. Most people in Georgia don't know what the herb is, so they call it "utskho suneli", which means "foreign spice." The best way to crush the seeds is in a mortar. Then, they smell better and make the flavor stronger.
