In Mexico we love cheeses and there is an important variety of them. Suffice it to say that in Mexico there are, according to the classification, about 20 to 40 cheeses of 100% national origin.

Most of them are fresh since the Mexican palate is not accustomed to the strong flavors of aged cheeses. Some you know, some you don't. Surely all of them will make your mouth water.

Cotija cheese

Made with raw milk from Holstein and zebu cows, with a strong and salty flavor. It was born in Cotija, Michoacán. In a recent contest, it was considered the "best foreign cheese".

Chihuahua cheese

Pasteurized cow's milk, yellow color, and clear flavor and aroma. It melts easily. It was brought by the Dutch Mennonites who arrived in Chihuahua in 1920.

Panela cheese

Fresh, white in color, with a porous and spongy texture. It is made in baskets that leave the weaving marks on the cheese, that is why it is also called canasta cheese.

Oaxaca cheese

It is also known as string cheese. It is fresh, with a mild flavor. It stretches and forms strips that melt easily. Originally from the municipality of Etla, in Oaxaca.

Queso de bola

It is produced in southeastern Mexico and is similar to Dutch Edam cheese. It has a red wax covering and is used to make the delicious stuffed cheese of Yucatan.

Poro cheese

It is from Tabasco and is made in square wooden molds, which create holes, called pores, that give it its tasty personality.

Mexican Manchego cheese

Although it comes from Spanish cheese, they do not have much in common. It is made with pasteurized cow's milk. Its texture is soft and firm, and it melts easily.

Chiapas cream cheese

Acidic in flavor, its texture is creamy and it also crumbles. The total protagonist of the delicious Chiapas cuisine.

Añejo cheese

One of the few kinds of cheese with a strong flavor and smell in the country. It is made in the State of Mexico and is aged for 20 days, with a year of maturation.

Tetilla cheese

From the municipality of Rosamorada, Nayarit, it is only made during the rainy season. Its paste is soft and has a conical shape, hence its name.
