Mashed potatoes are a great accompaniment to meat and fish dishes, go well with meat and mushroom sauces, and are just as great with salads. Add sautéed onions or mushrooms to the mash and you have a main dish that doesn't need any toppings.

Preparation:

Place the potatoes in boiling water. It is not recommended to blend the boiled potatoes, as this gives them a sticky consistency. Potatoes can absorb a lot of milk, so it is advisable to heat it a little more than the recipe indicates.

The more watery the potatoes, the less they absorb the milk, butter, and other additives. Add the preheated milk to the potato mixture. When cold, the mass will be grey. Adding sweet cream will make the puree taste more delicate.

Mashed potatoes go well with mustard seeds, nutmeg, onions, thyme, and horseradish, and chopped herbs can be added. The milk for the puree can be flavored.

Pour into a saucepan, add pepper, garlic clove, chili, saffron, bay leaves, or other spices of your choice, bring to a boil, and leave to infuse for 10 minutes. If the puree is leftover, it can be pan-fried the next day.
