100 g prawns
Small red onion
2 celery stalks
8 pitted olives
Juice from half a lemon
For the sauce:
4 tablespoons mayonnaise
4 tablespoons fat-free yogurt
1 tablespoon lemon juice
1 tablespoon ketchup
Cut the avocado in half, remove the stone, carefully remove the flesh with a spoon (without bruising the skin), cut into cubes, and drizzle with lemon juice. Rinse the prawns with cold water, drain and add to the avocado pieces. Dice the celery stalks. Finely chop the olives and chop the onion. Place everything in the bowl with the avocado and prawns.
Mix the mayonnaise and the rest of the dressing ingredients into a sauce. Season with salt and pepper if necessary. Add to the chopped vegetables and shrimps and mix. Fill the hollowed avocado skins with the salad.
