Arroz verde estilo Aguascalientes (Green Rice Aguascalientes Style Recipe)

(Serves 4)

Ingredients:

1 cup of clean and soaked rice
1 bunch of fresh spinach
Necessary oil
Chicken or beef bouillon, can be in powdered form
Salt
Pepper to taste

Preparation:

In a medium saucepan, fry the rice. Stir it, making sure it does not burn. Next, add the chopped and cooked spinach. Add salt and pepper to taste and cover the pan. Cook over low heat, stirring periodically to prevent sticking. Check if the rice is not cooked yet, add a little broth to facilitate cooking. Garnish with guacamole. To make guacamole use 1 chopped avocado, 1 chopped tomato, 1/4 chopped onion, 1 chopped garlic clove, and chopped serrano chile to taste.
