Queso de almendras (Almond Cheese Recipe)
1 kg sugar
500 grams of almonds
With the sugar and a little water make a syrup and mix in the soaked, peeled and well ground almonds. When it is cold, add 16 well beaten egg yolks. Put them back on the fire until they reach a paste consistency. When the mixture is lukewarm, grind it in the blender and shape it into cheese. Moisten with a little syrup and cover with cinnamon powder.
